i have always been a huge fan of instant recipes and particularly instant breakfast recipes. being a south Indian, i am a big fan of idli and dosa recipes which generally require additional planning like soaking, grounding and fermentation too. i am not complaining about these, but someday i prefer to just get up and have instant breakfast recipes. even though i have posted quite a few instant dosa recipes, instant savoury pancakes were long due. so thought of sharing these basic rice flour pancakes. in addition to these pancakes, i have also shared basic coriander and mint chutney which should be an ideal condiment for this pancake. in short, the end to end process of pancake and chutney should take a maximum of 10-15 minutes, and thus an ideal morning breakfast.
furthermore, some more additional tips, suggestions and variants to the rice pancake recipe. firstly, this recipe is an instant version prepared using rice flour, but it can also be prepared with normal rice too. however, to use normal rice, you need to soak it for a minimum of 6-8 hours and then ground it into a fine paste. secondly, adding finely chopped vegetables is completely optional and also open-ended to this pancake batter. you can either completely skip it or use any type of vegetables. lastly, these pancakes are generally made with rice flour and a hint of rava. however, to make it even softer, you can add a 1 tbsp of besan to make it softer.

Rice Pancake Recipe - No Egg | Instant Rice Flour Pancakes or omelette
Ingredients
- 1 potato, boiled & chopped
- 1½ cup rice flour
- ½ cup rava
- ½ tsp chilli flakes
- 1 tsp salt
- 2 tbsp onion, finely chopped
- 2 tbsp capsicum, finely chopped
- 2 tbsp carrot, finely chopped
- 2 chilli, chopped
- 2 tbsp coriander, finely chopped
- ½ tsp eno fruit salt
Instructions
- firstly, in a mixer jar take 1 potato and ½ cup water.
- grind to smooth paste.
- transfer the aloo paste to a large bowl.
- add 1½ cup rice flour, ½ cup rava, ½ tsp chilli flakes and 1 tsp salt.
- mix well making sure everything is well combined.
- now add 2 tbsp onion, 2 tbsp capsicum, 2 tbsp carrot, 2 chilli and 2 tbsp coriander.
- mix well making sure everything is well combined.
- cover and rest for 20 minutes or until the rava is soaked well.
- after the batter has rested well, add ½ tsp eno fruit salt and mix gently.
- once the batter turns frothy, immediately pour over the hot tawa.
- pour half tsp oil, cover and simmer for 2 minutes.
- keep the flame on medium and cook until the top of the pancake is cooked completely.
- flip over and cook both sides.
- finally, enjoy instant rice pancake with coconut chutney.

- firstly, add vegetables of your choice to make it nutritious.
- additionally, adding eno makes the pancake super soft.
- also, rice flour can be replaced with soaking rice and grinding to a smooth batter.
