misal pavmisal pav recipe | mumbai misal pav recipe | usal – misal pav recipe with step by step photo and video recipe. misal pav, a popular breakfast or snack dish basically from maharashtra. which has been widely accepted by all over india. this dish is made up of misal, which is spicy curry made from moong sprouts and pav which is in other words known as indian bread. the beauty of this dish is that, it is than topped with farsan or sev with some finely chopped onions and coriander leaves plus lemon.

my husband started his career in pune and he developed the taste for maharashtrian cuisine and the street food. he was insisting me from long time to prepare this snack recipe and i wasn’t able to nail it down. also, i tried to get the recipe from my twin brother who is currently working in pune, but to no avail. finally, i got in touch with my new friend sharmila sawant angane, from mumbai. luckily, she was more than happy to share the misal pav recipe with me. moreover, she shared the recipe with step by step photos directly from her kitchen. thanks a lot sharmila for this amazing recipe.

misal pav

this misal pav recipe is a mumbai or pune version, however there are several other version of misal pav from different places of maharashtra. the other most popular versions are kolhapuri and nasik version which is more spicy than this recipe. also, i have seen in some area, misal pav is shared with aloo poha base. this makes the gravy thick and gives different dimension and taste to missal pav. also, you can prepare this recipe with peas sprouts, chole sprouts and bean sprouts too. i have restricted myself while adding oil, however, it taste delicious when the oil floats.

Ingredients
for pressure cooking sprouts:
  • 1 cup moong sprouts (whole green gram) / matki
  • 2 cup water
  • salt to taste
  • ¼ tsp turmeric powder
for misal masala recipe:
  • 1 tsp oil
  • ¼ onion, sliced
  • 3 garlic cloves
  • 1 inch ginger
  • 2 tbsp dry coconut / kopra
  • water as required, for blending
for misal recipe:
  • 2-5 tbsp oil (if you are not diet conscious use 5 tbsp oil)
  • ½ tsp jeera / cumin seeds
  • few curry leaves
  • ¼ onion, finely chopped
  • 1-2 tsp kashmiri chilli powder, adjust to your spice level
  • 1 tsp coriander powder
  • ¼ tsp garam masala powder
  • 1 tomato, finely chopped
  • 2-3 cups water, adjust to required consistency
  • salt to taste
for serving:
  • 6 pav
  • 1 cup farsaan / mixture
  • ½ onion, finely chopped
  • few coriander leaves, finely chopped
  • few lemon wedges
Instructions ( 1 cup =255 ml)
pressure cooking sprouts recipe:
  1. in a pressure cooker, take a cup of moong sprouts.
  2. add 2 cups of water, salt and turmeric powder.
  3. pressure cook for 1 whistle or till sprouts get cooked well.
misal masala recipe:
  1. in a kadai add a tsp of oil, along with sliced onions.
  2. also add garlic cloves and ginger. saute till the raw smell of ginger and garlic disappears. takes approx. 3-4 minutes.
  3. then add dry coconut / kopra and continue to saute till you get aroma from coconut.
  4. cool the masala completely and then blend smooth adding required water.
misal recipe:
  1. in the same kadai add oil along with jeera. allow to splutter.
  2. then add few curry leaves
  3. also add finely chopped onion and saute till they sweat.
  4. next add all the spices like kashmiri chilli powder, coriander powder and garam masala powder. fry till the spices gets infused into oil.
  5. then add tomato and saute till they start releasing oil.
  6. once the tomatoes are cooked, add prepared masala and fry for a minute or 2.
  7. add cooked sprouts and give a good mix.
  8. boil for 10 minutes on medium flame. keep mixing in between so that it doesn't get burnt from bottom.
  9. then add 2-3 cups water, adjusting the consistency. you need to keep watery consistency as we will be boiling further.
  10. add salt to taste.
  11. boil further for 10 minutes on low flame so that spices get absorbed by sprouts.
serving preparation:
  1. in a serving bowl, add some farsan.
  2. and then pour prepared misal.
  3. top with 2 tbsp of mixed farsaan, chopped onions and coriander leaves over it.
  4. serve immediately with pavs and lemon wedges.

notes:

  • to get authentic misal pav served in street of mumbai, add more oil and cook till oil floats on top.
  • i have prepared misal pav slightly spicy. however, increase the amount of chilli powder to make it more spicy.
  • add farsan / mixture just before you serve. else it will not taste great and become soggy.
  • you can also use mixed combination of moong sprouts, peas sprouts, chole sprouts and bean sprouts.
  • to prepare usal, use only white peas.
