i am always a huge fan of healthy snacks recipes which are easy and simple to make. i have posted recipes similar to these using either semolina or besan, but this recipe is a combination of both. in addition, there is a generous amount of fresh fenugreek leaves which brings the additional taste, flavour and health aspect. i personal like this snack compared to my other 2 variations as it is prepared with leafy vegetable in it. the fenugreek leaves are ideal choice but you can also use other options like spinach, radish or beet leaves as an alternative. as matter of fact, you may also add other vegetables like potato, carrot, beans and beetroot to make it more colourful and tasty.

furthermore, i would also like to add some more tips, suggestions and variations to a perfect crispy methi ka nashta recipe. firstly, there is no hard and fast rule to shape it in a pancake way. you may steam it like idli, or you can also use appam maker to cook or bake it. but make sure to apply a sufficient amount of butter while frying or cooking. secondly, the combination of rava and besan makes it an ideal snack with fenugreek leaves. but you may also make it either one of them and should taste equally good. lastly, this recipe is an instant version and hence you need a fermenting agent to raise the batter when cooked. the best recommendation is eno fruit salt, but you may also use baking soda and powder combination too. you can use a pinch of both for the below-mentioned quantity.

Ingredients
  

  • 1 cup besan
  • 1 cup rava / suji, coarse
  • 1 bunch methi / fenugreek, finely chopped
  • 1 carrot, grated
  • 1 tsp ginger paste
  • 1 chilli, finely chopped
  • ½ cup curd
  • ¾ tsp salt
  • 1 cup water
  • ½ tsp eno

for tempering:

  • 2 tbsp oil
  • ½ tsp mustard
  • 1 tsp sesame
  • ½ tsp cumin
  • pinch hing
  • few curry leaves
  • pinch chilli powder
  • 1 tbsp butter

Instructions
 

  • firstly, in a large bowl take 1 cup besan, 1 cup rava.
  • add 1 bunch methi, 1 carrot, 1 tsp ginger paste and 1 chilli.
  • also add ½ cup curd, ¾ tsp salt and mix well.
  • now add ½ cup water and mix well forming a thick batter.
  • rest for 10 minutes or until the rava absorbs water well.
  • now add ½ cup water and adjust consistency mixing well.
  • scoop out 2 ladlefuls of batter in a small bowl.
  • add ½ tsp eno and mix gently.
  • now in a pan heat 2 tbsp oil. splutter ½ tsp mustard, 1 tsp sesame, ½ tsp cumin, pinch hing and few curry leaves.
  • once the tempering splutters, pour in the prepared batter.
  • also sprinkle pinch chilli powder on top.
  • cover and simmer for 2 minutes or until the base gets cooked well.
  • now flip over and mark a slit in the centre.
  • place 1 tbsp butter and allow to roast on low flame until both sides are cooked well.
  • finally, enjoy methi ka nashta with tomato sauce.

notes:

  • firstly, make sure to cook on low to medium flame, else it will remain uncooked from inside.
  • also, adding curd will reduce the bitterness of methi leaves. so do not skip the curd.
  • additionally, you can also prepare the pakoda with the same batter.
