Chilli mushrooms are a popular Indo-Chinese starter recipe or street food snack prepared with deep-fried mushrooms and a chilli-based sauce. They are almost similar to any Indo-Chinese chilli recipe prepared with button mushrooms. This chilli variation is a dry variant without sauce and is served as a starter or appetiser.

Chilli recipes are one such subdivision where a key ingredient is stir-fried and tossed capsicum and chilli-based sauce. I have used deep-fried mushrooms in this recipe as the key ingredient in spicy sauce coated on a crisp mushroom.
I have already posted the other popular chilli variants like Gobi and paneer, but I was getting several requests for the mushroom one, too. There isn’t any significant difference between the chilli sauce and the chilli sauce. But the batter prepared for the chilli mushroom recipe coating differs slightly from its successors. Generally, mushrooms are tender and moist inside, and hence, when deep fried, it would release their moisture. Therefore, the coating must be firm and robust without damage while deep frying. Consequently, I added corn flour to the batter, making it firm and stiff. Furthermore, these deep-fried mushrooms taste great and can be served as a snack.
The recipe is straightforward, yet there are some tips and suggestions for a spicy chilli mushroom dry. Firstly, I highly recommend using fresh and tender mushrooms for this recipe. It has to be moist and juicy even after deep frying. Secondly, I have not added amino moto, which adds extra flavour and artificial taste to most Indo-Chinese recipes. If you prefer, then you are more than welcome to add it. Lastly, this recipe is prepared as a dry variant, but you can also prepare the same gravy variant. You can double the quantity of cornstarch with chilli sauce for more gravy. It should taste ideal when served with fried rice or veg noodles.

About Chilli Mushroom
It is a simple and spicy Indo-Chinese starter recipe. It consists of deep-fried mushroom fritters sauteed in chilli Manchurian sauce. Chilli Mushroom, commonly known as Mushroom Chilli Dry, is a vegetarian alternative to the popular chilli chicken prepared with the same ingredients. Compared to other chilli recipes, mushrooms have a more soft and tender texture inside, thus resembling more meat-based variants. It makes an ideal party starter or appetiser and a perfect side dish in fried rice recipes.
There are many variations and types of Chilli Mushroom recipes; the most common is the dry version. The other most popular way is to make it with chilli manchurian gravy. In other words, more cornstarch is added to the base, thus making an ideal curry with rice and other main dishes. In addition, the same recipe can be further extended with other hero ingredients like paneer, potatoes, baby corn, and even meat alternatives.

Chilli Mushroom Recipe | Mushroom Chilli Dry - Street Style
Ingredients
- 20 mushroom, half
- ½ tsp chilli powder
- ½ tsp turmeric
- ½ tsp cumin powder
- 1 tsp ginger garlic paste
- 2 tbsp corn flour
- 2 tbsp maida
- ½ tsp salt
- ¼ cup water
- oil, for deep frying
for manchurian:
- 2 tbsp oil
- 5 cloves garlic, finely chopped
- 1 inch ginger, finely chopped
- 2 chilli, finely chopped
- 2 tbsp spring onion, chopped
- ½ onion, finely chopped
- ½ capsicum, cubed
- ½ onion, petals
- 2 tbsp tomato sauce
- 2 tsp chilli sauce
- 2 tsp vinegar
- 2 tsp soy sauce
- 1 tsp chilli powder
- ½ tsp salt
- 2 tbsp corn flour slurry
Instructions
- Firstly, in a bowl take 20 mushroom in a bowl and blanch in hot water for 5 minutes.
- Drain off the water, and transfer the mushroom into the bowl.
- Add in ½ tsp chilli powder, ½ tsp turmeric, ½ tsp cumin powder, 1 tsp ginger garlic paste and mix well.
- Also add 2 tbsp corn flour, 2 tbsp maida and ½ tsp salt.
- Mix well, making sure everything is well combined.
- Add in water and prepare the batter coating uniformly.
- Deep fry into oil, keeping the flame on medium.
- Fry until the mushroom turns golden brown and crisp.
- Drain off and keep aside.
- In the wok heat 2 tbsp oil, 5 cloves garlic, 1 inch ginger and 2 chilli.
- Stir fry till the spices turn aromatic.
- Also fry 2 tbsp spring onion, ½ onion till the onion softens.
- Add ½ capsicum, ½ onion and stir fry till the capisucm turn crunchy.
- Now add 2 tbsp tomato sauce, 2 tsp chilli sauce, 2 tsp vinegar, 2 tsp soy sauce, 1 tsp chilli powder and ½ tsp salt.
- Sir fry till the sauces are well combined.
- Also add 2 tbsp corn flour slurry and cook till the sauce turns glossy.
- Add in fried mushroom, 2 tbsp spring onion and mix well.

Notes
- Firstly, make sure to blanch the mushroom to remove the rawness and dirt from it.
- Also, add red food colour to the batter to prepare bright red colour Mushroom Manchurian.
