chaat recipes is one of the favourite sections in my blog. i have contributed a lot of recipes to it, and i would be continuing to do so. however, i have been getting a lot of requests to make a no onion no garlic chaat recipes, to be consumed during fasting days. moreover, navaratri is coming and i thought of sharing some easy and simple tomato-based chaat recipe. even with tomato-based chaats, there are myriad variations, but for me, i thought of sharing the famous banarasi aloo tamatar ki chaat. in this recipe, i have done some variations to the authentic recipe. basically, for the topping, i have used simple bombay mixture chiwda, in the place of namak pare. but other than i have strictly followed the authentic recipe without any deviations.

furthermore, i would also like to mention some more tips, suggestions and variations to the aloo tamatar ki chaat recipe. firstly, the tomatoes have to be ripe and juicy with bright red in colour. basically, the ripe tomatoes would ooze out more juice and colour with a hint of sweetness in it. secondly, this is a no onion no garlic chaat recipe, but it can be experimented to use onion and garlic. perhaps, you can top the finely chopped red onions and red garlic chutney just before serving. lastly, as the authentic recipe, it is always served in small quantity in a small plate. also, do not forget to top it with a generous amount of melted ghee to have the full flavour.

Ingredients
  

for tomato base:

  • 2 tbsp ghee / clarified butter
  • 1 tbsp ginger, grated
  • 5 cashew, chopped
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp cumin powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp chaat masala
  • 2 tbsp tamarind chutney
  • 2 tomato, roughly chopped
  • ½ tsp salt
  • 1 potato, boiled & chopped
  • 1 cup water
  • 2 tbsp mint, finely chopped
  • 2 tbsp coriander, finely chopped

jeera sugar syrup:

  • 2 cup water
  • ¼ cup sugar
  • ½ tsp cumin powder
  • ½ tsp chaat masala
  • ¼ tsp chilli powder

other ingredients:

  • ghee, for serving
  • sev or namak pare, for garnishing
  • coriander, finely chopped

Instructions
 

tomato base preparation:

  • firstly, in a large kadai heat 2 tbsp ghee and saute 1 tbsp ginger.
  • add 5 cashew and saute until it turns golden brown.
  • keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp chaat masala and 2 tbsp tamarind chutney.
  • saute on low flame until the spices turn aromatic.
  • now add 2 tomato, ½ tsp salt and saute for 2 minutes.
  • boil for 3 minutes or until tomatoes soften slightly.
  • further add 1 potato and saute well.
  • add 1 cup water and mix well.
  • cover and boil for 5 minutes or until the ghee separates.
  • further add 2 tbsp mint and 2 tbsp coriander. mix well.
  • tomato base for chaat is ready.

jeera sugar syrup preparation:

  • firstly, in a saucepan take 2 cup water, ¼ cup sugar, ½ tsp cumin powder, ½ tsp chaat masala and ¼ tsp chilli powder.
  • mix well and boil for 5 minutes or until a sticky sugar syrup is formed.

tamatar chaat serving:

  • for serving tamatar chaat, in a plate add prepared tamatar base.
  • top with 1 tsp ghee and 2 tbsp fo prepared jeera sugar syrup.
  • further top with sev or namak pare and coriander leaves.
  • finally, enjoy banarsi tamatar chaat with chai.
